Recipe: Lemon Blueberry Muffins

Blueberry Muffin Mix
Milk (or water according to package instructions)
Lemon Juice
Powdered Sugar
This fantastically simple recipe is a must for any brunch or after-dinner coffee. Bake muffins according to package instructions. Be sure not to use a cupcake liner for them. They will soak up the glaze much better without. Mix a cup of powdered sugar with lemon juice (a little at a time) until you get a good thick, yet easy to pour glaze. When the muffins come out of the oven poke holes in the top with a toothpick and pour glaze over them while they are still in the pan. It will allow them to soak up all that wonderful glaze. They are wonderful warm or cool. Enjoy!
