Recipe: Soup and Sweet Cornbread

Ever since my friend Daisy made this soup, I cant get enough of it. I have literally made it two time in the past two weeks. It is so easy and so delicious. Its not really chilli, but its not really taco soup. Ahh perfect for fall.

Soup: Brown 1 pound of ground beef or turkey, 1/2 onion diced, green  and yellow bell pepper diced, 1 can of corn drained, 1 can of black beans drained, fresh cilantro and basil chopped,  2 cans of chicken stock, 3 tablespoons tomato paste, 2 tablespoons of chilli powder, salt and pepper to taste. Let simmer.

Cornbread: 1 box of Jiffy Corn Muffin Mix, 1 can of cream corn, 1 egg, 1/3 cup milk, 1 tablespoon sugar. Bake at 350 degrees for 18 minutes or until golden.
