I had a couple friends over for a light summer dinner this week. I spent less than $10 and this meal fed four people! Here is the easy recipe:
2 cans of chickpeas (drained)
4 cloves of fresh garlic
Cilantro (I used a whole lot)
Pinch of red pepper flakes
Juice of 2 limes
Extra Virgin Olive oil as needed for moisture
Sea salt to taste
Blend all ingredients in a food processor until smooth.
Serve with cucumber slices, bell pepper slices, pita chips, or crackers.
