Red Velvet Cookies

These cookies are so easy and so good. A friend introduced me to the idea of using a cake mix to make cookies and I have been experimenting. I used Duncan Hines Red Velvet mix and creme cheese frosting for these.

1 box of cake mix
2  eggs
1/2 cup of vegetable oil
frosting (optional but too good to leave out)

All you do is combine your cake mix, oil and eggs together. Roll the dough into little balls and place on your cookie sheet. I did not grease my sheet because there is enough oil in the recipe to make them come right off. Bake for 10 minutes at 350 degrees. Make sure they cool all the way before you try to move them (I learned that the hard way). Frost and enjoy!
